delicate cake to 'Orange
In the absence of frumina I used the flour (150 grams instead of 200) and I wanted to try for the first time in my life the use of egg whites and placed at the end of dough, but alas with little success or better, the cake is coming, the dough is puffed and frothy, I was careful and scrupulous in being sensitive to not remove the egg that looked intact but the cake came out a bit 'low. I strongly suggest you get out the butter from the fridge a few hours before it so as to simplify, as far as we can, working with butter cream for me is the most annoying! Uff
INGREDIENTS:
For the sponge:
5 eggs 200 g sugar 100 g butter
200 grams of flour (I used 150 because I was so good;) although I'll try 200 grams next time)
frumina 150 gr (I've used it in the absence of the flour, 150 gr)
1 packet of yeast
Zest and juice of three oranges
To cream filling:
150 grams of sugar 200 ml orange juice
2 / 3 tablespoons of flour (depending on how you want, I will I put 3 and then I added a bit 'of water: P)
any water (to dilute or to slow boil faster cooking)
For the syrup: (optional to your taste)
3 tablespoons of sugar Half a glass of water
filtered juice of two oranges
To decorate:
icing sugar, orange wedges
PROCEDURE
For the sponge:
Preheat the oven for 15 min 180.
In a bowl cream the butter and add sugar gradually. Stir in the egg yolks one at a time and make sure that they freshness (always) and add the chopped orange zest.
Add spoonfuls of flour (and frumina if you decide to use it) already sifted previously mixed with baking powder, alternating with of orange juice.
Whisk the egg whites and mix well and pour the mixture gently, from the bottom up with precise movements and delicate looking and stir to incorporate evenly as the 'dough to try not to completely remove the egg whites until stiff.
Pour the mixture into the pan and baked in the pre-heated oven and cook for about 25 min.
For the filling:
Dissolve the sugar in a saucepan and pour orange juice on low heat for few minutes.
Combine the sifted flour and mix well with a wooden spatula (flat ones, the classic pastry cream), continue stirring until cooked.
If it were a bit 'or should cook in double quick time put a bit' of water, I've made for 150 ml some 'undecided on the creation was new, but the next time I could only put 2 tablespoons of flour instead of 3, although the consistency that I had was really good, then what does it matter that I had to run after the consistency by adding water? This makes it more customizable! ;)
When the bubbles and the texture is formed as a real creamy sauce can turn off the heat and stir occasionally until it cools down!
As the creamy sauce cools split into two drives, the sponge cake and put a spoon cream and spread until level. Then overlay the disk over to close the pie.
(as you can see me play of the tails of chocolate and I thought of them, the combination of orange and chocolate is good but since they are very fine chocolate will feel just the taste and not distract aroma and taste of orange)
PS: If you prefer to wet the inside of the sponge cake for an additional perfume or moisture can dissolve sugar in a saucepan, water and orange juice and simmer a few minutes figs no sugar is dissolved nsi. However, the sponge cake comes out of his already soft because I did not use the bathroom;)
To decorate:
